
Last night, I made collard greens with ground turkey. I combined elements of two recipes I found and added my own twist at the end. Read on for the ingredients and instructions.
Ingredients
- 1 bunch of collard greens, stems removed, sliced into 1″ strips
- 1 lb ground turkey
- 3 pieces uncured bacon
- 1 yellow onion, diced
- 4 garlic cloves, minced
- 1 red or green pepper, chopped
- 1 jalapeno, chopped
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/4 cup chicken broth
- Soy sauce, to taste
- Olive oil, to coat skillet
Instructions
Cook bacon in skillet until lightly crispy. Then set aside and cut into small pieces.
Heat olive oil in a skillet over medium. Once hot, add onions and red pepper and sauté until soft, about 4 minutes.
Add in chopped jalapeno and garlic and sauté until fragrant, about 1 minute.
Add the spices and cook for about 30 seconds, stirring constantly.
Add ground turkey and cook, breaking up the meat into pieces, until mostly done, about 6 minutes. Add in small, cooked bacon pieces.
Add collard greens and chicken broth and cook until wilted, about 10 minutes. Add more seasoning for taste.
Serve over rice. Top with soy sauce, to taste.
