Continue readingMy wife and I made a recipe recently, courtesy of Wendy Polisi of Kicking Carbs, which was tasty and easy: Grilled Lemon Pepper Chicken. We made it on a George Forman Grill and had French-cut green beans and tater tots as sides. All told, the meal was 31 net carbs, and I had half a piece of chicken left over which I had the next day for lunch with a side of spinach. Read on for the recipe, nutritional information, and more. If you’re also making this using a George Forman Grill, make sure to look up the appropriate amount of time to cook your chicken. Enjoy!

I find it fitting that I decided to get into Atkins in 2022, the 50th anniversary of Dr. Robert C. Atkins’ seminal book that brought the low-carb approach to millions of people the world over. Below is my review of the updated version of Dr. Atkins’ New Diet Revolution, released in 2002. The audiobook, which is what I’m reviewing here, came out in 2004.
Continue readingHere’s another low-carb recipe for you, courtesy of Wendy Polisi of Kicking Carbs: Keto Chili Cheese Dog Casserole! My wife and I had this recently for dinner, and it was good. However, two things are worth noting — first, the recipe says to preheat the oven from the get-go; this is incorrect as you have many preparatory steps to take before the oven is even needed. Second, I added leftover Banza macaroni and cheese shells to my leftovers of this casserole and it made it eminently better than the recipe below.
